Preheat the Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Whisk together until well mixed.

Cut in Butter
Cut the stick of unsalted butter into small pieces and add to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk and Rosemary
Make a well in the center of the flour mixture and pour in the buttermilk and fresh rosemary. Stir gently until just combined; do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a rectangle about 1 inch thick. Use a biscuit cutter to cut out biscuits.

Place the biscuits on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden brown.

In a skillet over medium heat, add the sausage and cook until browned, breaking it into crumbles.

Once the sausage is cooked, sprinkle in the all-purpose flour and stir well to combine. Cook for about 2 minutes to remove the raw flour taste.

Gradually whisk in the milk, stirring constantly to prevent lumps. Continue to cook until the gravy thickens, about 5-7 minutes.

Add black pepper and salt to taste, stirring well to combine.
