Pasta Preparation

Cook the Pasta
In a large pot of salted boiling water, cook the conchiglie pasta according to package instructions until al dente. Drain and set aside.

Make the Roux
In a large skillet over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 1-2 minutes until lightly golden and bubbly.

Add Milk
Gradually whisk in the milk, making sure there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

Add Cheese
Reduce the heat to low and stir in the American cheese and white cheddar until fully melted and smooth. Season with salt and black pepper.
Combine and Bake

Combine Pasta and Cheese Sauce
Add the cooked conchiglie pasta to the cheese sauce in the skillet, stirring to combine evenly.

Prepare Bacon
Cook the bacon in a separate pan until crispy. Remove from heat, chop into small pieces, and set aside.

Prepare Topping
In a small bowl, combine the panko breadcrumbs with olive oil and mix until the breadcrumbs are well-coated.

Sprinkle the chopped bacon over the mac and cheese. Top with the panko mixture. Transfer the skillet to a preheated oven at 350°F (175°C) and bake for 20-25 minutes or until the top is golden brown and crispy.
