Main Ingredient

Method

Preparation

  1. 1

    Collecting Maple Sap

Tap mature maple trees to collect sap. Each tree can produce about 40 liters of sap during the season. Ensure to have clean buckets to gather the sap.

  2. 2

    Filtering the Sap

Once collected, immediately filter the sap through a fine mesh strainer to remove any debris or impurities.

Cooking

  1. 3

    Boiling the Sap

Pour the filtered sap into a large pot. Begin boiling the sap over medium heat, stirring occasionally to prevent scorching.

  2. 4

    Monitoring the Temperature

As the sap boils, use a syrup thermometer to monitor the temperature. The sap needs to reach 104°C (219°F) to become syrup. This process can take several hours.

  3. 5

    Finishing the Syrup

Once the syrup reaches the desired temperature, remove it from heat and allow it to cool slightly.

Bottling

  1. 6

    Straining the Syrup

Before bottling, strain the syrup one more time through the fine mesh strainer to ensure a clear final product.

  2. 7

    Bottling the Syrup

Pour the hot syrup into sterilized glass bottles or jars, leaving a small amount of space at the top. Seal the bottles while the syrup is still hot.
