Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently until just combined; the batter should be slightly lumpy. Do not overmix.

Cooking

  1. 4

    Heat the Pan

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a little butter or cooking spray.

  2. 5

    Cook the Pancakes

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, about 1-2 minutes more.

  3. 6

    Serve

Remove the pancakes from the skillet and keep warm. Serve stacked with maple syrup and fresh berries on top.
