Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.

Cook the Vegetables
In a non-stick skillet, heat 1 tablespoon of butter or oil over medium heat. Add diced bell peppers and chopped spinach. Sauté until softened, about 2-3 minutes.

Add Cheese and Finish Cooking
Sprinkle the shredded cheese on top of the omelet. Cover the skillet with a lid and let it cook until the cheese melts and the eggs are fully cooked, about 2-3 minutes. Carefully fold the omelet in half and slide it onto a plate.

Peel and grate the potatoes. Rinse them in cold water to remove excess starch, then pat them dry with a clean towel.

Toast the slices of whole grain or sourdough bread in a toaster until golden brown. For the English muffin, split it in half and toast until crispy.
