Preparation

    Prepare the Black Beans

    In a saucepan, heat the black beans over medium heat until warmed through. Stir occasionally and season with salt to taste.

    Make the Salsas

    If using homemade salsas, prepare your salsa roja and salsa verde according to your preferred recipe. Otherwise, set aside store-bought versions.

    Cook the Chorizo or Sausage

    In a skillet, cook the chorizo or Beyond Italian sausage over medium heat until fully cooked, breaking it into small pieces. Remove from heat and set aside.

Cooking the Eggs

    Fry the Eggs

    In a non-stick skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes for over medium.

Assembling the Dish

    Warm the Tortillas

    In a separate skillet, heat the corn tortillas on both sides until warm and pliable.

    Assemble Huevos Divorciados

    On each plate, place two warm tortillas. Add a layer of black beans, and then place two fried eggs on top. Drizzle salsa roja over one egg and salsa verde over the other.

    Add Toppings

    Top the dish with pico de gallo and crumbled queso fresco. If desired, add cooked chorizo or sausage on the side.
