Cook the Potatoes
In a large skillet over medium heat, add the diced potatoes and cook for about 10-12 minutes, stirring occasionally until they are golden and tender.

Add Sausage and Vegetables
Add the Andouille sausage to the skillet and cook for an additional 5 minutes until browned. Then add the diced red bell pepper, onion, mushrooms, and Fresno pepper and sauté until softened, about 5-7 minutes.

Hollandaise Sauce Preparation

Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.

Incorporate Butter
Slowly drizzle in the melted butter while continuing to whisk until the sauce is creamy and smooth. Season with cayenne pepper and salt to taste.

Assemble High Hat Hash
Place a slice of whole grain bread on each plate. Top with the potato and sausage mixture, followed by the cooked eggs. Drizzle the hollandaise sauce over the top.
