    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a handful of soaked potatoes to the hot oil. Fry in batches to avoid overcrowding. Cook for about 5-7 minutes or until golden and crispy.

    Drain and Season

    Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt and black pepper to taste.

Jalapeno Ketchup

    Prepare the Jalapenos

    Remove the stems and seeds from the fresh jalapenos. Chop them finely.

    Mix the Ketchup

    In a bowl, combine the ketchup, chopped jalapenos, garlic powder, lime juice, and brown sugar. Stir well to combine.

    Adjust Seasoning

    Taste the jalapeno ketchup and adjust the seasoning if necessary. You can add more lime juice or sugar according to your preference.
