Burger Patty

    Prepare the Patty Mixture

    In a mixing bowl, combine the chorizo sausage and ground beef. Add salt, black pepper, and garlic powder. Mix well until fully incorporated.

    Form the Patties

    Divide the mixture into two equal portions and form into patties, ensuring they are slightly larger than the ciabatta rolls as they will shrink while cooking.

    Cook the Patties

    Heat a skillet or grill over medium-high heat. Cook the patties for about 5-6 minutes on each side or until they reach an internal temperature of 160°F (71°C).

Egg

    Cook the Egg

    In a small skillet, add a little oil or butter over medium heat. Crack the egg and cook until the white is set but the yolk is still runny, about 3-4 minutes. Season with a pinch of salt.

Pico de Gallo

    Prepare Pico de Gallo

    In a bowl, finely dice the tomato and red onion. Chop the cilantro and add to the bowl along with lime juice and salt. Mix well and set aside.

Cilantro-Lime Aioli

    Make Cilantro-Lime Aioli

    In a small bowl, combine mayonnaise, chopped cilantro, lime juice, minced garlic, and salt. Stir until smooth and well combined.

Assembly

    Assemble the Burger

    Slice the ciabatta rolls in half. Spread a generous amount of cilantro-lime aioli on the bottom half. Place the cooked patty on top, followed by a slice of pepper jack cheese, a spoonful of pico de gallo, and finally the egg. Top with the other half of the ciabatta roll.
