Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, combine the semi-sweet chocolate chips and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Whisk the Eggs

    In a separate bowl, whisk together the large eggs and granulated sugar until the mixture is pale and slightly thickened. This should take about 4-5 minutes.

    Combine Ingredients

    Add the melted chocolate mixture and vanilla extract to the egg mixture. Gently fold the ingredients together until well combined.

    Whip the Cream

    In a large mixing bowl, whip 300 ml of heavy whipping cream until soft peaks form. This should take about 3-4 minutes with an electric mixer.

    Fold in the Cream

    Gently fold the whipped cream into the chocolate mixture in three additions. Be careful not to deflate the whipped cream; the mousse should be light and airy.

    Chill the Mousse

    Spoon the mousse into serving cups or bowls and refrigerate for at least 2 hours, or until set.

    Prepare the Whipped Cream

    In a medium mixing bowl, combine 100 ml of heavy whipping cream, powdered sugar, and vanilla extract. Whip together until stiff peaks form, which should take about 3-4 minutes.

    Once the mousse is set, top each serving with a dollop of the prepared whipped cream. Optionally, garnish with chocolate shavings or cocoa powder before serving.
