Method

Crust Preparation

  1. 1

    Combine Ingredients

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until the mixture is well combined and resembles wet sand.

  2. 2

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Ensure it’s packed tightly.

  3. 3

    Pre-bake the Crust

Preheat the oven to 350°F (175°C) and bake the crust for 8-10 minutes, then remove and set aside to cool.

Filling Preparation

  1. 4

    Mix Cream Cheese

In a large mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy, about 2 minutes.

  2. 5

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream, continuing to beat until fully incorporated.

  3. 6

    Incorporate Eggs and Vanilla

Add the vanilla extract and eggs, one at a time, mixing well after each addition until just combined.

  4. 7

    Add Flour

Gently fold in the all-purpose flour using a spatula until no flour streaks remain.

  5. 8

    Pour Filling into Crust

Pour the cheesecake filling over the pre-baked crust, spreading it evenly.

  6. 9

    Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

  7. 10

    Chill the Cheesecake

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for the best texture.

Topping Preparation

  1. 11

    Prepare Berries

In a small bowl, toss the fresh mixed berries with powdered sugar. Let them sit for 10-15 minutes to release some juices.

  2. 12

    Serve

Slice the chilled cheesecake and top each slice with the sweetened berries before serving.
