Method

Prepare the Challah Bread

    Toast the Challah

    Preheat a skillet over medium heat. Brush each slice of challah bread with olive oil on both sides and toast them in the skillet until golden brown, about 2-3 minutes per side.

Prepare the Avocado Spread

    Mash the Avocados

    In a bowl, scoop out the flesh of the ripe avocados. Add lime juice, salt, and black pepper. Mash together with a fork until you achieve a creamy consistency. Set aside.

Poach the Eggs

    Fill a saucepan with water and bring it to a gentle simmer. Add the white vinegar. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes, or until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.
