Preparing Shrimp

Season the Shrimp

In a bowl, toss the shrimp with blackening seasoning to coat evenly.

Cook the Shrimp

Heat olive oil in a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side or until they are opaque and cooked through. Remove from heat and set aside.

Preparing Mango Filling

Mix the Mango

In a small bowl, combine diced mango and lime juice. Mix gently and set aside.

Making Pico de Gallo

Combine Ingredients

In a medium bowl, mix together diced tomatoes, red onion, cilantro, lime juice, and salt to taste. Set aside.

Assembling Quesadilla

Layer the Ingredients

On one half of each tortilla, layer cooked shrimp, mango mixture, and shredded mozzarella cheese.

Fold and Cook

Fold the tortillas over to create a half-moon shape. Heat a non-stick skillet over medium heat and cook each quesadilla for 3-4 minutes on each side or until golden brown and the cheese is melted.

Mix Lime Crema

In a small bowl, combine sour cream and lime juice. Stir until smooth and set aside.

Cut the quesadillas into wedges and serve warm with pico de gallo and lime crema on the side.
