Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels, reserving about 2 tablespoons of the bacon fat.

Combine Ingredients
Chop the cooked bacon and add it back to the skillet with the onions and garlic. Stir in the brown sugar, apple cider vinegar, black pepper, and thyme.

Simmer the Mixture
Reduce heat to low and let the mixture simmer for about 25-30 minutes, stirring occasionally, until the mixture thickens and becomes jam-like.

Cool and Blend
Remove from heat and let the bacon jam cool slightly. For a smoother texture, blend the mixture in a food processor until desired consistency is reached.
Toasted Baguette with Goat Cheese

Prepare the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.

Toast the Baguette
Place the baguette slices on a baking sheet. Brush each slice lightly with olive oil and toast in the oven for about 5-7 minutes, or until golden and crispy.

Spread Goat Cheese
Remove the toasted baguette slices from the oven and let cool slightly. Spread a generous layer of goat cheese on each slice.

Add Bacon Jam
Top each goat cheese-covered baguette slice with a spoonful of bacon jam. Optionally, sprinkle with fresh herbs for added flavor.
