Focaccia Preparation

    Activate Yeast

    In a small bowl, mix warm water with active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large bowl, combine all-purpose flour and salt. Make a well in the center, add the yeast mixture and olive oil. Stir until a rough dough forms.

    Knead

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare Toppings

    While the dough is rising, prepare the toppings: finely chop garlic, parsley, chives, and fennel. Set aside.

    Shape Focaccia

    Once risen, punch down the dough and transfer it to a greased baking pan (about 9x13 inches). Stretch and press the dough to fit the pan. Use your fingers to create dimples all over the surface.

    Add Toppings

    Drizzle olive oil over the dough, then sprinkle with chopped garlic, Parmesan cheese, fennel, parsley, and chives. Let it rest for another 20-30 minutes.

    Bake

    Preheat the oven to 400°F (200°C). Bake the focaccia for 20-25 minutes or until golden brown.

    Remove from the oven, let cool slightly, and serve warm with sunflower romesco and strawberry balsamic on the side.
