Pork Chop Preparation

Season and Sear

Season the pork chops with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the pork chops for about 4-5 minutes on each side until they develop a nice crust. Cook until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest.

Bread Pudding Preparation

Prepare the Mix

In a large bowl, combine the cubed stale bread, pork fat, minced garlic, diced onion, thyme, salt, and black pepper. In another bowl, whisk together the eggs and milk, then pour over the bread mixture. Stir to combine and let sit for 30 minutes.

Bake

Preheat the oven to 350°F (175°C). Transfer the mixture to a greased baking dish and bake for 30-35 minutes until set and golden brown on top.

Mix Vinaigrette

In a small bowl, whisk together whole grain mustard, red wine vinegar, olive oil, honey, and season with salt and black pepper to taste.

Pickled Coleslaw Preparation

Make the Slaw

In a large bowl, combine shredded cabbage, grated carrots, apple cider vinegar, sugar, salt, and black pepper. Toss to mix well and allow to sit for at least 30 minutes before serving.
