    Prepare the Lamb

    In a large pot, heat olive oil over medium heat. Season the lamb shoulder with salt and pepper. Brown the lamb on all sides, then remove from the pot.

    Make the Chile Colorado Sauce

    In the same pot, add chopped onion and garlic, cooking until soft. Toast the dried chiles in a dry skillet until fragrant, then soak in hot water for 15 minutes. Blend the soaked chiles with onion, garlic, cumin, oregano, and a cup of the soaking liquid until smooth.

    Braised the Lamb

    Return the lamb to the pot and pour the chile sauce over it. Cover and simmer on low for 2-3 hours, or until the lamb is tender and easily pulled apart.

    Prepare the Tortillas

    Warm the corn tortillas in a skillet or on a griddle until pliable.

    Assemble the Gorditas

    Shred the lamb and place a generous amount on each tortilla. Top with goat cheese, crumbled cotija, and thinly sliced radishes.
