Preparation Steps
Prepare the Short Ribs
Season the short ribs with salt, black pepper, garlic powder, and onion powder. In a large skillet, heat olive oil over medium-high heat and sear the short ribs on all sides until browned.
Cook the Short Ribs
Transfer the seared short ribs to a slow cooker. Pour the blackberry BBQ sauce over the ribs, cover, and cook on low for 6-8 hours or until the meat is tender and easily pulls apart.
Prepare the Coleslaw
While the ribs are cooking, prepare the pickled coleslaw by mixing shredded cabbage, carrots, and your choice of pickling liquid. Let it marinate in the refrigerator for at least 30 minutes.
Assemble the Sandwiches
Once the short ribs are done, shred the meat and mix with the BBQ sauce. Slice the Cuban hoagie rolls and layer with lettuce, pulled short ribs, a slice of pepper jack cheese, and pickled coleslaw. Close the sandwich and serve.
