Hash Preparation

    Prepare the Potatoes

    Boil the fingerling potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly. Once cool, smash them gently with a fork.

    Cook the Pancetta

    In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Hash

    In the same skillet, add the smashed potatoes and cook until they start to brown, about 5 minutes. Add the smoked salmon, capers, and green onions. Combine well and cook for an additional 3-4 minutes. Season with salt and black pepper.

    Cook the Eggs

    In a separate pan, fry the eggs sunny-side up or to your desired doneness.

Aioli Preparation

    Make the Aioli

    In a blender, combine roasted red peppers, mayonnaise, garlic, lemon juice, and salt. Blend until smooth. Adjust seasoning to taste.

Assembly

    Serve

    Plate the smoked salmon hash and top each serving with a fried egg. Drizzle with roasted red pepper aioli and garnish with additional green onions if desired.
