Prepare the Pork

In a small bowl, mix together brown sugar, salt, black pepper, garlic powder, onion powder, and chipotle powder. Rub this mixture all over the pork shoulder. Place the pork in a slow cooker and add apple cider vinegar. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix the shredded pork with chipotle BBQ sauce.

Make the Slaw

In a bowl, combine watercress, jicama, lime juice, and salt. Toss to mix well and set aside.

Roasted Red Pepper Aioli

Prepare the Aioli

In a blender, combine mayonnaise, roasted red peppers, garlic clove, and lemon juice. Blend until smooth and creamy.

Assembly

Assemble the Sliders

Slice the mini brioche buns in half. On the bottom half of each bun, layer shredded pulled pork, a slice of smoked gouda, a scoop of watercress-jicama slaw, and a drizzle of roasted red pepper aioli. Top with the other half of the bun and serve.
