Method

Prepare the Pork

Season the Pork

In a small bowl, mix together the brown sugar, chipotle chili powder, salt, and black pepper. Rub the mixture all over the pork tenderloin.

Cook the Pork

Heat olive oil in a skillet over medium-high heat. Add the pork and sear on all sides until browned. Reduce the heat to low, cover, and cook for about 15-20 minutes until the internal temperature reaches 145°F. Let it rest for 5 minutes before slicing.

Prepare the Slaw

Mix the Slaw

In a bowl, combine watercress and jicama. Drizzle with lime juice and sprinkle with salt. Toss to combine and set aside.

Prepare the Aioli

Make the Aioli

In a small bowl, mix together mayonnaise, chopped roasted red pepper, minced garlic, and lemon juice until well combined.

Assemble the Sandwiches

Combine and Serve

Slice the ciabatta rolls in half. On the bottom half, layer smoked gouda slices, sliced pork, watercress-jicama slaw, and drizzle with roasted red pepper aioli. Top with the other half of the ciabatta roll and serve.
