Make the Filling

In a large bowl, combine the cooked and shredded beef short ribs, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, and chopped cilantro. Mix well until all ingredients are evenly incorporated.

Assemble the Potstickers

Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half over the filling, and pinch to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers

In a large skillet, heat a tablespoon of oil over medium heat. Add the potstickers, making sure not to overcrowd the pan. Cook until the bottoms are golden brown, about 3-4 minutes. Then, add 1/4 cup of water to the skillet and cover immediately to steam the potstickers for about 5 minutes.

Serve

Remove the potstickers from the skillet and serve warm with toasted sesame seeds and ponzu sauce on the side for dipping.
