Prepare the Pickled Shiitake

Soak shiitake mushrooms in rice vinegar for at least 30 minutes, then slice and set aside.

Cook the Skirt Steak

Season the skirt steak with salt and pepper. In a hot skillet, sear the steak for about 3-4 minutes on each side for medium-rare. Remove from heat and let rest before slicing.

Make the Fried Rice

In the same skillet, add sesame oil and minced ginger, sauté for about 1 minute. Add cooked rice and stir-fry for 2-3 minutes. Push rice to the side and scramble the eggs in the pan. Once eggs are cooked, mix them with the rice. Add soy sauce and stir to combine.

Sauté the Veggies

In a separate pan, stir-fry snap peas and bok choy with a drizzle of oil until tender, about 3-4 minutes.

Assemble the Dish

Plate the double egg fried rice, top with sliced skirt steak, sautéed veggies, pickled shiitake, and garnish with mint and cilantro.
