    Prepare the Rice

    In a saucepan, combine jasmine rice, 1 cup of water, and 1 tablespoon of green curry paste. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender. Fluff with a fork and set aside.

    Make the Broth

    In a pot, heat 1 tablespoon of oil over medium heat. Add minced lemongrass and sauté for 1-2 minutes. Stir in coconut milk, vegetable broth, remaining green curry paste, and lime juice. Simmer for 10 minutes. Season with salt and pepper.

    Sear the Ahi Tuna

    Season the Ahi tuna steaks with salt and black pepper. In a skillet, heat 2 tablespoons of oil over high heat. Sear the tuna steaks for about 1-2 minutes on each side for rare, or until desired doneness. Remove from heat and let rest.

    Sauté the Vegetables

    In the same skillet, add shiitake mushrooms, snap peas, and heirloom carrots. Sauté for about 3-4 minutes until tender-crisp. Add Thai basil leaves and stir.

    Plate the Dish

    On a plate, create a bed of green curry rice. Place the sautéed vegetables on top and slice the seared Ahi tuna. Arrange the slices on the vegetables and drizzle with spicy coconut lemongrass broth.
