    Prepare the Cauliflower Tahini

    Steam or roast the cauliflower until tender. In a blender, combine the cauliflower, tahini, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

    Toast the Grains

    Prepare the mixed toasted grains according to package instructions. Once cooked, set aside to cool.

    Make the Lemon Sultana Vinaigrette

    In a small bowl, mix together the lemon juice, olive oil, sultanas, salt, and black pepper. Whisk until combined.

    Cook the Salmon

    Preheat a grill or skillet over medium-high heat. Season the Scottish salmon fillets with salt and black pepper. Cook the salmon for about 4-5 minutes on each side, or until cooked to your liking.
