Method

Preparing the Rotisserie Chicken

    Season the Chicken

    Preheat your oven to 375°F (190°C). Rub the whole chicken with olive oil, salt, black pepper, garlic powder, and paprika, making sure to coat it evenly.

    Roast the Chicken

    Place the chicken in a roasting pan and roast in the oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C). Remove from the oven and let it rest for 10 minutes before carving.

Grilling the Broccolini

    Prepare the Broccolini

    Preheat a grill or grill pan over medium heat. Toss broccolini with olive oil, salt, and lemon juice.

    Grill the Broccolini

    Place the broccolini on the grill and cook for about 5-7 minutes, turning occasionally until tender and slightly charred.

Roasting the Heirloom Carrots

    Prepare the Carrots

    Preheat the oven to 400°F (200°C). Toss the heirloom carrots with olive oil, honey, salt, and thyme.

    Spread the carrots on a baking sheet and roast in the oven for 25-30 minutes until tender and caramelized, stirring halfway.

Making Chimichurri Sauce

    Blend the Ingredients

    In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Pulse until finely chopped but not pureed.

    Adjust and Serve

    Taste and adjust seasoning as needed. Serve chimichurri alongside the chicken, broccolini, and carrots.
