Prepare the Chimichurri Sauce

In a food processor, combine parsley, oregano, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth and set aside.

Prepare the Fries

Cut the potatoes into thin strips to make fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Cook the Fries

Drain and pat the potatoes dry. Heat oil in a deep fryer or pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes per batch. Drain on paper towels and season with salt.

Cook the Steak

Season the ribeye steaks with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook the steaks for about 4-5 minutes per side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

Prepare the Arugula Salad

In a bowl, toss arugula with a drizzle of olive oil and a pinch of salt. Serve immediately.

Plate the steak with chimichurri sauce drizzled over the top, alongside a generous serving of fries and the arugula salad.
