    Marinate the Skirt Steak

    In a bowl, mix soy sauce, sesame oil, salt, and pepper. Add skirt steak and marinate for at least 30 minutes.

    Pickle the Shiitake Mushrooms

    In a small pot, heat vinegar and sugar until dissolved. Add sliced shiitake mushrooms and let them sit in the mixture for about 30 minutes.

    Prepare the Vegetables

    Blanch the snap peas and bok choy in boiling water for 2 minutes, then transfer to ice water to retain color.

    Cook the Fried Rice

    In a large skillet, heat sesame oil over medium heat. Scramble the eggs and add cooked rice, mixing well. Stir in ginger and season with soy sauce.

    Cook the Skirt Steak

    In a hot grill or skillet, cook the marinated skirt steak for about 4-5 minutes on each side for medium-rare. Let it rest before slicing.

    On a plate, serve a portion of fried rice, top with sliced skirt steak, arrange blanched snap peas and bok choy, and garnish with pickled shiitake, mint, and cilantro.
