Marinate the Chicken
In a bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add chicken thighs and marinate for at least 1 hour in the fridge.

Make the Sriracha Aioli
In a small bowl, combine mayonnaise, sriracha, and hot honey. Mix well and set aside.

Dredge the Chicken
In a large bowl, mix together flour and cornstarch. Take the marinated chicken out of the buttermilk, allowing excess to drip off, then dredge in the flour mixture until fully coated.

Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken thighs and fry for about 6-8 minutes on each side or until golden brown and cooked through. Remove from oil and drain on paper towels.

Assemble the Sandwich
Spread the sriracha aioli on the bottom half of the brioche buns. Place a piece of fried chicken on top, followed by a generous amount of the pickle slaw. Top with the other half of the bun and serve immediately.
