    Prepare the Shrimp

    In a bowl, toss the shrimp with olive oil, garlic powder, smoked paprika, salt, and black pepper. Let marinate for 15 minutes.

    Grill the Vegetables

    Slice the bell peppers and onion. Heat a grill pan over medium-high heat and grill the vegetables until charred and tender, about 5-7 minutes. Remove and set aside.

    Grill the Shrimp

    In the same grill pan, cook the shrimp for 2-3 minutes on each side until they are opaque and cooked through. Remove from heat.

    Make the Sweet Corn Elote

    In a bowl, mix the corn with lime juice, cilantro, and salt. Optionally, add some crumbled cheese for extra flavor.

    Prepare the Guacamole

    Mash the avocados in a bowl and mix with diced tomato, red onion, lime juice, and salt to taste.

    Prepare the Adobo Salsa

    Finely chop the jalapeño and mix it with adobo sauce, lime juice, and a pinch of salt.

    Warm the Tortillas

    Warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side.
