Rub the marinade all over the lamb shoulder, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Preheat your oven to 350°F (175°C).

In a large roasting pan, place the chopped carrots and diced potatoes. Drizzle with a little olive oil, salt, and pepper, and toss to coat.
