Method

Directions

  1. 1

    Prepare the Marinade

In a bowl, mix together minced garlic, chopped rosemary, olive oil, salt, black pepper, and lemon juice to create a marinade.

  2. 2

    Marinate the Lamb

Rub the marinade all over the lamb shoulder, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

  3. 3

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  4. 4

    Prepare the Vegetables

In a large roasting pan, place the chopped carrots and diced potatoes. Drizzle with a little olive oil, salt, and pepper, and toss to coat.

  5. 5

    Roast the Lamb

Place the marinated lamb shoulder on top of the vegetables in the roasting pan. Pour the vegetable broth around the lamb. Cover the pan with foil and roast for 2 hours.

  6. 6

    Final Touch

After 2 hours, remove the foil and roast for an additional 30 minutes until the lamb is browned and tender.

  7. 7

    Serve

Remove from the oven, let rest for 10 minutes, then slice and serve with the roasted vegetables.
