    Marinate the Stag Meat

    In a large bowl, combine the red wine, olive oil, fresh rosemary, minced garlic, salt, and black pepper. Add the stag meat and ensure it is well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.

    Prepare the Vegetables

    While the meat is marinating, peel and cut the carrots and potatoes into chunks, and chop the onion. Set aside.

    Sear the Meat

    In a large pot or Dutch oven, heat a little olive oil over medium-high heat. Remove the stag meat from the marinade (reserve the marinade for later) and sear it on all sides until browned, about 5-7 minutes.

    Add the Vegetables

    Once the meat is browned, add the chopped onion, carrots, and potatoes to the pot. Sauté for about 5 minutes until the vegetables begin to soften.

    Add Stock and Marinade

    Pour in the beef stock and the reserved marinade. Bring the mixture to a boil.

    Simmer

    Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the stag meat is tender and the flavors are well combined.

Serving

    Garnish and Serve

    Once cooked, remove the stag meat and vegetables from the pot. Slice the meat and serve it with the vegetables, drizzling some of the cooking liquid over the top. Garnish with fresh parsley before serving.
