Quesadilla Preparation

Heat the Pan
Place a large skillet or frying pan over medium heat and add 1 tablespoon of olive oil, letting it heat for about 1-2 minutes.

Assemble the Quesadilla
Place one tortilla in the skillet. Sprinkle 1 cup of spicy jack cheese evenly over the tortilla. Place another tortilla on top.

Cook the Quesadilla
Cook for about 3-4 minutes or until the bottom tortilla is golden brown. Carefully flip the quesadilla using a spatula and add the remaining tablespoon of olive oil around the edges.

Finish Cooking
Cook for another 3-4 minutes until the second side is golden brown and the cheese has melted. Remove from the skillet and let it cool slightly before cutting.
Serving Instructions

Slice the Quesadilla
Using a sharp knife or pizza cutter, slice the quesadilla into wedges.

Serve
Arrange the quesadilla wedges on a plate and serve with a side of sour cream and salsa for dipping.
