Preparing the Potatoes

Cut the Potatoes
Cut the peeled potatoes into 1/4 to 1/2 inch thick strips. Try to make them as uniform as possible for even cooking.

Soak the Potatoes
Place the cut potato strips into a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.
Frying the Fries

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dry the Potatoes
After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add a batch of potato strips to the hot oil, being cautious of splattering. Fry until golden brown and crispy, about 5-7 minutes. Do not overcrowd the pot.

Remove and Drain
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil.

While the fries are still hot, sprinkle with salt and black pepper to taste.
