    Prepare the Chicken

    Grill the chicken breast until fully cooked and slice it into thin strips. You can marinate the chicken with your favorite spices for added flavor before grilling.

    Chop Vegetables

    Dice the green bell pepper and red onion into small pieces. Ensure that the tomatoes are also diced evenly for consistent distribution in the quesadilla.

    Mix Ingredients

    In a large bowl, combine the sliced grilled chicken, diced green bell pepper, diced red onion, and diced tomatoes. Mix well to ensure even distribution of all ingredients.

Cooking

    Assemble the Quesadilla

    Take one tomato herb tortilla and place a quarter of the chicken and vegetable mixture on one half of the tortilla. Sprinkle one half cup of spicy pepper jack cheese on top of the mixture. Fold the tortilla in half to cover the filling.

    Cook the Quesadilla

    Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat this process for the remaining tortillas.

    Once cooked, remove the quesadilla from the skillet and allow it to cool for a minute. Cut each quesadilla into 6 wedges to make a total of 24 pieces. Serve with sour cream and salsa on the side.
