Prepare the Chicken
Preheat your oven to 400°F (200°C). In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, place the bread crumbs mixed with salt and pepper. Dip each chicken strip first in the flour, then in the egg, and finally coat with the bread crumbs.

Bake the Chicken
Place the breaded chicken strips on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the chicken is cooked through and golden brown, flipping halfway through for even cooking.

Assemble the Wrap
Once the chicken is cooked, remove it from the oven and allow it to cool slightly. Lay each tortilla wrap flat on a clean surface. Begin by placing a layer of shredded lettuce in the center of each wrap.

Add Ingredients
Next, add a few pieces of the baked chicken strips on top of the lettuce. Sprinkle a blend of pepper jack and cheddar cheese over the chicken, followed by diced tomatoes, onions, and a drizzle of buffalo wing sauce.

Wrap it Up
Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat this process for all wraps.

Cut each wrap in half diagonally and serve with additional buffalo wing sauce on the side for dipping, if desired.
