Preparing the Potatoes

    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the Russet potatoes to remove any dirt. Dry them with a paper towel and poke a few holes in each potato with a fork. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender and a fork easily pierces through.

    Cool and Cut the Potatoes

    Once the potatoes are baked, remove them from the oven and let them cool for about 10-15 minutes. Carefully slice each potato in half lengthwise, and scoop out the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides of the potato skins with olive oil, and sprinkle with salt and black pepper.

Assembling and Baking

    Add Toppings

    Sprinkle a generous amount of shredded cheddar cheese into each potato skin, followed by crumbled bacon and chopped green onions.

    Bake Again

    Place the loaded potato skins on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serving

    Serve the Skins

    Remove the potato skins from the oven and let them cool for a minute. Serve warm with a dollop of sour cream on the side.
