    Prepare the Steak

    Season the sirloin steak with salt and black pepper on both sides.

    Sear the Steak

    In a pan, heat the olive oil over medium-high heat. Once hot, add the seasoned steak and sear for 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the pan and let it rest for 5 minutes.

Herb Butter

    Make the Herb Butter

    In a bowl, combine the unsalted butter, chopped parsley, chopped thyme, and minced garlic. Mix well until all ingredients are fully combined.

    Shape and Chill

    Transfer the herb butter mixture onto a piece of plastic wrap, shape into a log, and refrigerate until firm.

Fries

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and dry them thoroughly. Fry in batches for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt to taste.
