Preparation of Salmon

Marinate the Salmon
In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade and let them sit for at least 30 minutes at room temperature or in the refrigerator for up to 2 hours.

Preparation of Asparagus
Making Hollandaise Sauce

Prepare the Sauce
In a heatproof bowl, whisk the egg yolks and lemon juice together until they are pale and slightly thickened.

Cook the Sauce
Place the bowl over a pot of simmering water (double boiler). Gradually whisk in the melted butter until the sauce is thickened. Season with salt and cayenne pepper to taste.
Serving

Plate the Dish
On a plate, place a grilled salmon fillet alongside the grilled asparagus. Drizzle the hollandaise sauce over the salmon and serve immediately.
