Method
Cheesecake Base
- 1
Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined.
- 2
Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a measuring cup or your fingers to pack it tightly. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
Cheesecake Filling
- 3
Mix the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, sour cream, and vanilla extract, mixing until well combined.
- 4
Add eggs
Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.
- 5
Incorporate flour
Sift in the flour and mix on low speed until just combined.
- 6
Pour filling
Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
- 7
Bake
Bake in the preheated oven at 325°F (160°C) for 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- 8
Chill
Remove the cheesecake from the oven, let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Berry Compote
- 9
Prepare the compote
In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Stir gently to combine.
- 10
Cook the compote
Bring the mixture to a simmer and cook for about 10-15 minutes, stirring occasionally, until the berries have broken down and the mixture has thickened slightly.
- 11
Cool the compote
Remove from heat and let the compote cool to room temperature before serving.
