Cook the Pasta
In a large pot, bring salted water to a boil. Add the casarecce pasta and cook according to package instructions until al dente, approximately 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Shrimp
While the pasta cooks, heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper, and cook for about 3-4 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Sauce
Add the dry white wine to the skillet, scraping up any browned bits from the bottom. Allow it to simmer for about 2 minutes until reduced slightly. Stir in the lemon juice and zest.

Combine All Ingredients
Add the cooked casarecce pasta to the skillet along with the shrimp and ricotta cheese. Toss everything together, adding reserved pasta water as needed to create a creamy sauce. Adjust seasoning with salt and black pepper.

Transfer the shrimp casarecce to serving plates. Crumble seated salata cheese on top and garnish with chopped parsley before serving.
