Braised Baby Lamb Chops Preparation

    Sear the Lamb Chops

    In a large skillet, heat olive oil over medium-high heat. Season the baby lamb chops with salt, black pepper, and minced garlic. Sear the chops for about 3-4 minutes on each side until browned.

    Add Aromatics and Deglaze

    Add the fresh rosemary to the skillet with the lamb chops. Pour in the red wine to deglaze the pan, scraping up any brown bits. Bring to a simmer.

    Braised Cooking

    Cover the skillet and reduce the heat to low. Let the lamb chops braise for about 45 minutes or until tender.

    Prepare the Carrots

    While the lamb is braising, peel the carrots and cut them into sticks. Toss them in olive oil, salt, and pepper, and grill them on a hot grill until tender and slightly charred.

    Prepare the Cabbage

    Quarter the green cabbage and grill until slightly charred and tender, about 5-7 minutes.

    Prepare the Walnuts

    In a skillet, lightly toast the walnuts over medium heat until fragrant, then mix with the muhammara.

    Plate the Dish

    Once the lamb chops are tender, remove them from the heat. Plate the lamb chops with grilled carrots, charred cabbage, a side of watercress, and the spiced walnuts mixed with muhammara. Drizzle with mint sauce before serving.
