Lamb Chops and Accompaniments

Method

Preparation and Cooking

  1. 1

    Prepare the Muhummara Sauce

In a food processor, combine the walnuts, roasted red bell pepper, garlic, olive oil, pomegranate molasses, red chili flakes, salt, cumin, and lemon juice. Blend until smooth. Adjust seasoning to taste. Set aside.

  2. 2

    Prepare the Lamb Chops

Season the lamb chops generously with salt and pepper. Let them rest at room temperature for about 20 minutes before grilling.

  3. 3

    Grill the Lamb Chops

Preheat your grill to medium-high heat. Grill the lamb chops for about 4-5 minutes on each side for medium rare, adjusting time for desired doneness. Remove from grill and let rest for 5 minutes.

  4. 4

    Prepare the Carrots

While the lamb rests, steam or boil the baby carrots until tender, about 5-7 minutes. Toss with a little olive oil and salt to taste.

  5. 5

    Grill the Watercress

Quickly grill the watercress for 1-2 minutes until slightly wilted and charred. Remove from grill.

  6. 6

    Serve

On a large platter, arrange the lamb chops, steamed baby carrots, and grilled watercress. Drizzle the muhammara sauce over the lamb chops and serve with shredded green cabbage on the side.
