Wash the oranges thoroughly under running water to remove any dirt or pesticides. Cut the oranges in half and juice them, reserving the juice. Remove the seeds and finely chop the orange rinds into small pieces, ensuring that the white pith is minimized for a better texture.

In a large pot, combine the chopped orange rinds, orange juice, water, and lemon juice. Stir well to mix all the ingredients together.

Cook the Mixture
Place the pot over medium heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for about 30 minutes, stirring occasionally until the rinds are tender.

Add Sugar and Spices
After 30 minutes, add the granulated sugar, salt, ground ginger, and cinnamon stick to the pot. Stir the mixture until the sugar is completely dissolved.

Simmer Until Thickened
Continue to simmer the mixture for another 20-30 minutes, stirring frequently, until the marmalade thickens. You can test the consistency by placing a small amount on a cold plate and letting it cool for a minute; it should hold its shape.

Once thickened, remove the pot from heat. Remove the cinnamon stick and pour the hot marmalade into sterilized jars, leaving a little headspace at the top. Seal the jars tightly.

Let the jars cool completely at room temperature. Once cooled, store the marmalade in the refrigerator for up to 3 months or process in a water bath for longer shelf life.
