Salad Preparation
- 1
Prepare the Salmon
Preheat your oven to 400°F (200°C). Place the king salmon fillet on a baking sheet lined with parchment paper. Season with salt and pepper. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
- 2
Cook the Soba Noodles
While the salmon is baking, bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-6 minutes. Drain the noodles and rinse under cold water to stop the cooking process. Set aside.
- 3
Prepare the Vegetables
While the noodles are cooking, thinly slice the cucumber, carrot, and red bell pepper into matchstick pieces. Chop the green onions and finely chop the fresh cilantro.
- 4
Combine the Ingredients
In a large bowl, combine the soba noodles, cucumber, carrot, red bell pepper, green onions, and cilantro. Flake the baked salmon into large pieces and gently add it to the bowl.
- 5
Add the Dressing
Drizzle the salad with sesame oil and soy sauce to taste. Toss gently to combine all ingredients without breaking the salmon pieces too much.
- 6
Serve
Sprinkle sesame seeds over the salad before serving. Enjoy the salad chilled or at room temperature.
