Finishing Touches

Method

Burrata Cheese

  1. 1

    Prepare Burrata

In a bowl, mix the fresh mozzarella cheese and heavy cream. Add salt and stir until well combined. Shape the mixture into a ball and wrap it in plastic wrap. Refrigerate for at least 1 hour to firm up.

Marmalade

  1. 2

    Make Marmalade

Peel the oranges and remove any seeds. Chop them finely. In a saucepan, combine the chopped oranges, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the mixture thickens, about 30-40 minutes. Remove from heat and let cool completely.

Savory Pistachio Orange Pink Peppercorn Crumble

  1. 3

    Prepare Crumble

Preheat the oven to 350°F (175°C). In a food processor, pulse the pistachios, pink peppercorns, orange zest, olive oil, and salt until crumbly. Spread the mixture on a baking sheet and roast in the oven for about 10-12 minutes until golden. Allow to cool.

Toast

  1. 4

    Prepare Toast

Slice the baguette into thick slices. Brush both sides with olive oil and toast them in a skillet over medium heat or in a toaster oven until golden brown and crisp.

Assembly

  1. 5

    Plate the Dish

On a serving plate, place the burrata cheese in the center. Spoon the orange marmalade over the top, then sprinkle the savory pistachio orange pink peppercorn crumble over the burrata. Drizzle with Laudemio extra virgin olive oil and serve with the toasted baguette on the side.
