Method

Steak Preparation

  1. 1

    Prepare the Steak

Remove the NY Strip steaks from the refrigerator and let them come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

  2. 2

    Preheat the Grill

Preheat your grill to high heat. Brush the grill grates with olive oil to prevent sticking.

  3. 3

    Grill the Steaks

Place the steaks on the hot grill and sear for about 4-5 minutes on each side for medium-rare, or adjust time according to your preferred doneness.

  4. 4

    Rest the Steaks

Once grilled, remove the steaks from the grill and let them rest for 5-10 minutes before slicing.

Bordelaise Sauce Preparation

  1. 5

    Sauté Shallots

In a saucepan, melt 2 tablespoons of butter over medium heat. Add finely chopped shallots and sauté until translucent, about 3-4 minutes.

  2. 6

    Add Wine

Pour in the red wine and bring to a simmer. Allow it to reduce by half, which should take about 10-15 minutes.

  3. 7

    Add Beef Stock

Stir in the beef stock and fresh thyme. Simmer for an additional 10 minutes until the sauce thickens slightly.

  4. 8

    Finish the Sauce

Remove from heat and whisk in the remaining 2 tablespoons of butter. Season with salt and black pepper to taste.

Vegetable Preparation

  1. 9

    Prepare the Broccolini

Trim the ends of the broccolini and blanch in boiling salted water for 2-3 minutes until bright green and tender. Drain and set aside.

  2. 10

    Sauté the Pearl Onions

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the pearl onions and sauté until golden brown and tender, about 6-8 minutes. Season with salt and black pepper.

  3. 11

    Combine Vegetables

Add the blanched broccolini to the skillet with the pearl onions and toss to combine. Cook for an additional 2 minutes.

Assembly

  1. 12

    Plate the Dish

Slice the rested NY Strip steaks and place them on a plate. Top with a generous amount of bordelaise sauce and serve alongside the sautéed broccolini and pearl onions.

  2. 13

    Add Cheese

Grate or shave the dry aged cheese over the steak and vegetables just before serving for a rich, flavorful finish.
