Method

Preparation of Fish

    Marinate the Copper Drum

    In a bowl, combine the olive oil, salt, black pepper, and lemon juice. Add the Copper Drum fillets and coat them well. Let marinate for at least 30 minutes.

Fire Roasted Corn

    Roast the Corn

    Preheat a grill or grill pan over medium-high heat. Place the fresh corn on the grill and roast for about 10-15 minutes, turning occasionally, until charred. Once roasted, brush with butter and sprinkle with salt.

Summer Corn Squash

    Cook the Squash

    In a skillet, heat olive oil over medium heat. Add the minced garlic and sliced summer squash. Sauté for about 5-7 minutes until the squash is tender. Season with salt.

Corn Fritters

    Mix Ingredients

    In a mixing bowl, combine fresh corn kernels, all-purpose flour, eggs, baking powder, chopped green onions, and salt. Mix until just combined.

    Fry the Fritters

    In a deep skillet, heat oil over medium-high heat. Drop spoonfuls of the corn mixture into the hot oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Sweet Corn Aioli

    Prepare the Aioli

    In a blender, combine mayonnaise, fresh corn kernels, lemon juice, minced garlic, and salt. Blend until smooth and creamy. Adjust seasoning if needed.

Tabasco Honey

    Mix Honey and Sauce

    In a small bowl, combine honey and Tabasco sauce. Mix well until fully blended.

Vegetables

    Sauté the Vegetables

    In a skillet, heat a little olive oil over medium heat. Add sliced leeks and diced red bell pepper. Sauté for about 5 minutes until tender.

Grilling Fish

    Grill the Copper Drum

    Preheat the grill to medium-high heat. Place the marinated Copper Drum fillets on the grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.
