    Preheat your oven to 425°F (220°C).

    Prepare the Chicken

    Rinse the free-range heritage chicken under cold water and pat dry with paper towels. Place the chicken in a large roasting pan.

    Drizzle the olive oil over the chicken, ensuring even coverage. Rub the salt and black pepper all over the skin. Stuff the cavity with the garlic cloves, lemon (cut in half), fresh rosemary, and fresh thyme.

    Prepare the Vegetables

    Peel the carrots and cut them into large chunks. Peel the potatoes and cut them into quarters. Peel the onions and quarter them.

    Arrange Vegetables Around Chicken

    Arrange the prepared carrots, potatoes, and onions around the chicken in the roasting pan. Pour the vegetable broth into the pan.

    Roast the Chicken

    Place the roasting pan in the preheated oven. Roast for 1 hour and 15 minutes, basting the chicken with the pan juices every 20 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
