    Prepare the Vegetables

    In a bowl, combine the diced bell pepper, spinach, and onion. Set aside.

    Whisk the Eggs

    In another bowl, crack the eggs and whisk them together with salt and black pepper until well mixed.

    Cook the Omelet

    Heat olive oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet. Cook for about 2-3 minutes until the edges start to set.

    Add Vegetables and Cheese

    Sprinkle the vegetable mixture evenly over the eggs, followed by the shredded cheese. Cook for another 2-3 minutes until the cheese melts and the eggs are fully set. Fold the omelet in half and transfer it to a plate.

Brunch Potatoes

    Prepare the Potatoes

    Dice the potatoes into small cubes. Rinse and pat them dry.

    In a bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

    Cook the Potatoes

    Spread the seasoned potatoes on a baking sheet in a single layer. Bake in a preheated oven at 425°F (220°C) for about 25-30 minutes, stirring halfway through, until crispy and golden brown.

Pita

    Warm the Pita

    While the omelet and potatoes are cooking, warm the pita bread in a toaster or wrap in foil and place in the oven for the last 5 minutes of the potatoes' cooking time.
